Twice Cooked Chicken
« on: February 11, 2013, 04:53:51 pm »
1 Chicken (cut small, example large breast cut into 2 pieces)
2 cups Flour (self rising or plain)
Garlic powder
Papreka
Onion powder
Nature's Season Salt
Veg Oil
Aluminin foil
Gallon plastic bag
Skillet
Long pan at least 2 inches deep or one with a cover

Cut chicken into small pieces
Wash and pat dry
Season well on both sides with all seasonings
Take gal. plastic bag, add flour
Add chicken pieces, and shake to coat
Add to oil in skillet (set burner to about 7)
Once hot, add chicken
Fry till all sides have a nice brown coat (chicken won't be done)
Add chicken pieces to pan and add alittle more Morton Season Salt on top
Cover tightly with Aluminin foil
Bake for 1 hour at 350 degrees
Take foil off the last 15 mins so chicken can continue to brown and get crispy

Chicken will taste like fried chicken, only moister and it will be done
